This potato soup recipe is an easy and delicious recipe made in the slow cooker. It’s creamy, delicious and loaded with bacon, cheese and potatoes.

Ingredients

Scale
  • 5 pieces bacon, sliced and cooked
  • 56 potatoes, russet, golden yukon or red potatoes
  • 3 1/2 c chicken or vegetable stock
  • 1 onion, diced
  • 4 tbsp butter
  • 1/3 c all purpose flour
  • 12 oz. evaporated milk
  • 1/2 c sour cream
  • 1/2 c cheddar cheese
  • salt and pepper, to taste

Instructions

In the slow cooker: add the cooked bacon, diced potatoes, onion, salt and pepper.  Next, pour in the vegetable or chicken stock. You will want to ensure that the potatoes are just covered.

Slow cook on low for 6-8 hours or high for 3-4 hours. You simply want the potatoes to be tender.

Once the potato soup has cooked, place the butter in a saucepan and allow to melt.

Whisk in the flour to create the roux. Allow to cook the flour off for about a minute.

While using the whisk slowly pour in the milk until so that you have a smooth consistency. Allow to simmer as the roux will thicken quite a bit.

Pour the roux into the slow cooker and stir until fully combined.

Next, add in the grated cheese and sour cream.

Notes

  • evaporated milk – you can substitute for milk or even heavy whipping cream.
  • sour cream – you can also use greek yogurt in place of the sour cream.
